Position outputs:

  • Prepare and season, soups, vegetables, meats, desserts or other food commodities in the kitchen according to the wellness menu prepared by Medical Practitioners.
  • Inspect food preparation and serving areas, to ensure observance of safe sanitary food handling practises.
  • Ensure food served is portioned as per specification and is neatly garnished before serving.
  • Good communication and interaction with customers and appropriate employee engagement.
  • Ensures that the kitchen and back of house including the waste disposal area is clean and set-up according to the operational standard.
  • Ability to tell when something is wrong or is about to go wrong, and escalate to management.
  • The ability to shift back and forth between two or more activities.
  • The ability to arrange things in a certain order or patterns according to specific rule or sets of rules.
  • The ability to effectively communicate information and ideas.
  • The ability to apply general rules to specific situation to produce desired outcomes.
  • Ability to concentrate on a task over a period of time without being distracted.
  • Deliver the company kitchen standards as identified on food safety manual.
  • Comply with all Health, Safety and Food Hygiene standards as set by the company.
  • Ensure temperature records and food labelling are maintained and up to date.
  • Ensure your work station is clean and adhere to hygiene standards as set by the company clean as you go method to be applied.
  • Ensure all food is prepared to specification or as per instruction.
  • Ensure you are in uniform and personal hygiene is adhered to as per company policy/ standard.
  • Ensure you carry out allocated duties/ tasks smoothly on a daily basis.
  • Promote a positive perception of the company at all times both internally & externally.
  • Maintain the high standard of health and hygiene.
  • Supervision of kitchen staff in ensuring all above outputs are adhered to.

Qualifications & Experience:
Educational requirements

  • Grade 12.
  • Professional cookery Certificate (from SAQA accredited institution).
  • 2 to 3 years’ experience from three to five star hotel or similar establishment.

Functional training
1. Safety related in house training.
2. First Aid.
3. Fire fighting.

Other Requirements
1. Be prepared to undergo periodic medical surveillance and safety behavioural risk assessments during the selection process and every 12 months.
2. Physical hearing, vision, mental, fitness (to be verified through medical tests and related safety behavioural risk assessments).

Competencies:

Knowledge:

  • Basic cooking methods.
  • The knowledge of using all kitchen equipment and utensils as per standards including the storage and the handling.
  • Knowledge of customers service.
  • Hygiene and safety standards.
